Today I’d like to share a quick and simple breakfast recipe the whole family will love. Sweet potato hash patties have all the makings of a fat burning meal that takes just a few ingredients and about 10 minutes to make. The generous 3-patty serving size tackles even the toughest appetites with quality muscle building calories. If you’re feeding these to the kids, reduce the portion size to one or two patties, depending on age.
On to the recipe –
Serves: 2
Ingredients:
1 extra large Sweet potato ends snipped off, washed and shredded
1 cup Bell pepper, cut into strips or frozen pepper strips
1/2 ea. Spanish onion, thinly sliced and chopped
3 cloves Garlic, chopped
2 ea. Eggs, whole
8 ea. Egg whites
1 tsp. Cinnamon
1 tsp. Nutmeg
1 Tbs. Coconut oil, Virgin, Organic
Salt and pepper, to taste
Method of Preparation
1. Using a large cheese grater, shred the sweet potato and place into a large glass bowl. Season with cinnamon and set aside.
2. In a non stick skillet over medium high heat, place 1/2 the coconut oil and sauté bell peppers until fragrant, about 4 minutes. Season with nutmeg, and then add onions and garlic and sauté until fragrant, about 3 more minutes.
3. While the onions and peppers are cooking, add eggs and egg whites into the shredded sweet potato and mix well. After onions and peppers are finished cooking, add to sweet potato mixture and blend until well combined.
4. Using a 1/2 cup measure; scoop the sweet potato mixture and form into a patty (mix will bind, but may be loose, be careful not to over handle the mixture). Place each patty into the skillet and cook for about 3 minutes per side. Flip each patty over and continue to cook for an additional 2 minutes. Serve immediately.
