Protein & Superfood Breakfast Casserole

Start the day off with healthy energy to power through the day, with this quick & easy breakfast casserole with turkey, quinoa, black beans and Maca powder! Maca is great for energy, endurance and even increasing sexual desire in both men and women.

Ingredients for 3-4 servings:

  •  4 tsp Organic Burst Maca Powder
  •  1 lb. extra lean ground turkey
  •  2 cups cooked quinoa
  •  2/3 cup black beans
  •  2 eggs, 3 egg whites
  •  3/4 zucchini
  •  1 bell pepper
  •  1/3 red onion
  •  1 tbsp. garlic
  •  2/3 cup mozzarella

Optional: tomatoes, green onions*

1. Cook quinoa and cut up your veggies
2. In a bowl, mix 2 eggs and 3 egg whites
3. Cook veggies in a nonstick skillet with garlic, sea salt & pepper
4. Cook turkey separately then mix in sautéed veggies
5. Add quinoa to a bowl and then the rest of your ingredients
6. Add 4 tsp Maca powder to the mixture
7. Spray baking dish with a coconut oil. Add casserole mixture to dish.
8. Top with mozzarella and if desired, green onions and tomatoes.
9. Bake for 25 minutes at 405F.

397 Calories, 46g protein, 30g carbs, 10g Fat

He was overweight, felt sluggish and had steadily rising blood pressure. So, he did what many people try to do – he started exercising to try to “out train” a poor diet. He quickly learned through periods of weight cycling that if he was going to accomplish his fitness goals, it would have to be through a steady, healthy diet, complemented by hard work in the gym.

He started studying nutrition and got started cooking! In 2012 Kevin started a small blog to share his meals online in order to build a community around healthy food ideas.

The blog was called Fit Men Cook and it had a simple message and belief system – “Our bodies are built in the kitchen, Sculpted in the gym.”

Kevin firmly believes that healthier food options do not have to be boring. Ever. In fact, they are pretty tasty!
