Got Leftovers? Here Are Three Quick Muscle Meals

Chicken breast, chicken breast…what to do? If you’ve found yourself asking this question, then you may have “hit the wall” in terms of recipe ideas. You want a tasty meal that keeps you fit without spending hours in the kitchen. Here are three quick and simple recipes to keep your taste buds tingling and your metabolic fire burning! Enjoy!

Tarragon Chicken Salad
Serves 2

Ingredients:
1 ¼ cups Greek yogurt, nonfat
2 Tbs. fresh Tarragon or 1 tsp. dry tarragon
1 Tbs. Dijon mustard
3 cups Chicken breast, diced
½ cup Celery, minced
½ cup Scallions, minced
6 cups Mixed greens
1 cup Cherry tomatoes, halved
Salt and Pepper, to taste

Method of Preparation

1. In a bowl, combine tarragon, yogurt and mustard. Let stand 5 minutes.
2. Add chicken, celery, scallions and season to taste
3. Let chill for 10 minutes and serve over mixed greens. Garnish with tomatoes and serve.

Soft Chicken Tacos

Serves 4

Ingredients:
1 Tbs. Olive oil
1 lb. Chicken breast, cut into strips
2 cups Chicken stock
1 cup Medium salsa (I like to use chunky salsa)
¼ tsp. Garlic powder
¼ tsp. Onion powder
¼ tsp. Red pepper flakes
¼ tsp. Dried oregano
½ tsp. Dried paprika
1 Tbs. Chili powder
Sea salt and pepper, to taste
8 ea. Corn tortillas
½ cup Reduced fat cheese (optional)
Fat free sour cream (optional

Method of Preparation:

1. Heat oil in skillet over medium high heat. Add chicken, cook for 6 minutes or until cooked through.
2. Add chicken stock, salsa and seasonings. Mix well and bring to a simmer. Reduce heat and cook for about 5 minutes.
3. Spoon chicken onto corn tortillas, top with cheese and sour cream, if desired.

Cajun Chicken Gumbo

Serves 4

Ingredients:

1 Tbs. Olive oil
1 lb. Okra, frozen
1Tbs. Cornstarch (To provide thickness)
1 29 oz. can peeled, crushed tomatoes
3 cups Cubed chicken breast
2 tsp. Cajun seasoning
4 ea. Garlic cloves, chopped

Method of Preparation

1. Heat a large skillet over medium high heat, add the okra, garlic and tomatoes and over high heat, stir frequently. Stir in the cornstarch and heat another minute.
2. Stir in tomatoes, chicken and Cajun seasoning. Cook over medium high heat, constantly stirring, until heated through, about 6 minutes.
