Chicken Breast with Raw Avocado Salad

Incorporating raw veggies into your diet is a great idea for detoxifying your body and supplying it with vitamins and minerals. And you don’t have to solely rely on garden salads or broccoli to get your fresh veggies. With a little creativity in the kitchen, you can create flavorful, filling and delicious fresh veggie combinations.

• 6 oz chicken breast
• 1/2 Haas avocado
• 1/3 cup red cabbage (shredded)
• 1/4 cup carrot (shredded or matchsticks)
• 1/8 cup cilantro (chopped)
• juice from half orange
• sea salt & pepper to taste

Steps:

1. Season a chicken breast and cook a chicken breast in a skillet. For the seasoning, I used coconut aminos and salt-free jerk chicken seasoning.
2. Slice an avocado in half and dice the insides. Toss in a bowl.
3. Add red cabbage, carrots, cilantro, orange juice and sea salt & pepper to the bowl.
4. Mix the ingredients together until the avocado becomes creamy and coats the other ingredients.
5. If desired, add your own choice of complex carbohydrate to this meal.
6. Enjoy!

He was overweight, felt sluggish and had steadily rising blood pressure. So, he did what many people try to do – he started exercising to try to “out train” a poor diet. Kevin firmly believes that healthier food options do not have to be boring. Ever. In fact, they are pretty tasty!
