Breakfast Fit for a King

We’ve all heard the saying “Eat breakfast like a king, lunch like a prince and dinner like a pauper” especially when it relates to weight loss.  Here is a great tasting breakfast that will supply a hefty dose of lean body fuel and satisfy your taste buds at the same time.  Anyone who says healthy food is boring and bland never made this breakfast!Breakfast Fit for a King

Here’s what’s cooking –

  • Lemon –ricotta Pancakes with Strawberry Coulis
  • Egg white and chive omelet
  • Fresh cut fruit

For Pancakes & Coulis

Makes Approx.  12 pancakes


2 cupsWhole wheat flour

¼ cup Splenda

½ tsp. Salt, plus a pinch for egg whites

1 rounded tsp. baking powder

4 eggs, separated

1 hefty cup fat-free ricotta cheese

¾ cup skim milk

2 lemons, juiced and zested

For Coulis

1 pint Strawberries

½ cup pomegranate juice

Method of Preparation

1.Toss strawberries and orange juice together and let chill for 30 minutes.

2.After the berry mixture has settled, remove half of it from the bowl and place it in a blender and puree until smooth.  Add the puree back into the berry mixture and let chill until ready to use.


3.Combine all dry ingredients in a bowl.  In another bowl, combine egg yolks, ricotta, milk, lemon juice, zest and mix until well blended

4.Make a “well” in the dry ingredients, add the wet ingredients to the well and whisk until combined.

5.Pre-heat a flat top griddle.

6.In another bowl, using a hand mixer beat egg whites with a pinch of salt to stiff peaks.  Fold the egg whites into the flour mixture but in three batches.  This will give incredible fluffiness to your pancakes.

7.Fill a ½ cup measuring scoop to ladle out pancake batter and place onto the pre-heated griddle.

8.After pancakes are golden brown, top with chilled coulis and serve along side…..

Egg white & Chive Omelet

Makes 2 servings


1 dozen egg whites or 2 cups liquid eggs

2 egg yolks

½ shallot, minced

1 stalk green onion, sliced thin

Salt and pepper, to taste

Method of preparation

1.Pre-heat an omelet pan on medium high heat.  Separate or measure out the eggs and set aside in a bowl.

2.Mix salt and pepper together with sliced green onion and add to the eggs.  Cook eggs until solidified and fragrant.  Serve together with pancakes and a bowl of mixed fruit.
