Salmon Burger with Lime Mayo

Salmon burger with Lime Mayo

Serves: 2salmon burger

Ingredients:

2 cans    Pink Salmon, packed in water

½ ea.     Red onion, diced; (set aside 2 Tbs. for use in mayonnaise)

2 Tbs.    green onion, sliced

1 Tbs.    Soy sauce, low sodium

2 Tbs.    Lime juice

1 Tbs.    Old Bay seafood seasoning

1 ea.      Whole egg

½ cup    Bread crumbs, whole wheat

1 Tbs.    lime juice

1 Tbs.    Mayonnaise, low fat

2 slices  Whole wheat bread

6 leaves red leaf lettuce

½ ea.     Tomato, thinly sliced

Method of Preparation

  1.  In a glass bowl combine first 9 ingredients and blend until well combined.  Form into 2 large patties.
  2. In a non-stick pan over medium high heat, add 2 tsp. olive oil and heat the patties until browned, about 3 minutes per side.
  3. In a small bowl, combine mayo, red onion and lime juice and mix well.  Spread onto wheat bread and top with lettuce and sliced tomato.  Add burger last and enjoy!
