1 cup cooked quinoa
½ ea, red onion, chopped
¼ ea. Cucumber, seeds removed and diced
1 Tbs. Lemon juice
1/3 cup fresh pineapple, chopped
1 tsp. Garlic, diced
1 Tbs. fresh mint, chopped
1 tsp. Worcestershire sauce (optional)
Method of Preparation
1. In medium mixing bowl, combine all ingredients and toss together until well incorporated.
2. Allow to chill for 1 hour to allow flavors to blend.
