Greek style stuffed tomatoes

With the weather warming up, and weekend gatherings in full swing – here is another tempting dish that packs tons of flavor and a heavy hitting dose of nutrients, Greek style stuffed tomatoes.
This easy to make snack option brings out the crisp, sweet taste of tomatoes, highlights the freshness of basil and parsley and offers a creamy mouth feel from feta cheese. Just a few ingredients are needed to prepare this no-cook snack, so try it out and let me know what you think.

Yield: 1 Serving


3 ea. Compari tomatoes, seeds removed but chop the pulp
2 Tbs. Red onion
1/4 ea. Cucumber
2 Tbs. Feta cheese
1 Tbs. Parsley
1 Tbs. Basil, chopped
1 Tbs. Mint, chopped
1 tsp. Red wine vinegar
Pepper, to taste

Method of Preparation

1. Slice off tops of tomatoes and hull them out, seeds and pulp removed. In a medium bowl, combine all ingredients and stir until well combined.
2. Spoon mixture into hulled tomatoes & chill for at least 15 minutes. Serve cold.
