A crock pot, isn’t just for Winter you know. It’s a great way to make lots of meals with minimal clean up and it’s REALLY convenient on days where you otherwise may not feel like cooking.
Today’s recipe tastes great, is simple to prepare and allows you to stay on track with your nutritional goals – BBQ Chicken stuffed Sweet potatoes!
On to the Recipe!
Makes 8 servings
3 pounds Chicken breast, boneless, skinless
½ cup BBQ Sauce
2 medium Onions, sliced thin
8 ea. Sweet potatoes
½ cup Greek yogurt
½ cup Green onions, chopped
Method of Preparation
1. Place chicken breasts in the crock pot together with bbq sauce and onions. Cover and allow cooking for about 6 hours.
2. Using a fork to pierce potatoes, microwave each potato for approximately 5 minutes then slice in half lengthwise.
3. Top each potato half with 3 ounces of bbq chicken mixture, a dollop of Greek yogurt and green onions. Serve hot
