Breakfast Casserole

Here is a super easy to do recipe that requires just a few ingredients and a big appetite for flavor!  Make this dish ahead and toss it into the oven for a great tasting muscle building meal.

Yield: 8 Servings

Ingredients:breakfast casserole

1 Tbs. Olive oil, extra virgin
1 pound Ground Chicken breast
1 ea. Purple onion, chopped
4 ea. Whole eggs
8 ea. Egg whites
2 ea. Sweet potatoes, washed and grated
1 pkg. Frozen spinach
1 cup Cheddar cheese, low fat
1 ½ cups 1% cottage cheese

Method of Preparation

1. In a large skillet, cook chicken and onions until chicken is browned. Set aside.
2. In a large bowl, combine the remaining ingredients, stir in chicken and onion mixture and place into a 13 x 9 baking dish.
3. Bake, uncovered for 30-35 minutes at 350 degrees or until a knife inserted into the center comes out clean. Let stand for 5 minutes before slicing.
