Breakfast Banana Split

We’ve all heard that breakfast is the most important meal of the day, and while eggs make up a perfect protein source, but sometimes your taste buds call out for something different, maybe a bit more fun and exciting.  What could be better than a breakfast banana split!?

This is not your typical ice cream treat – although it tastes like one, but unlike the traditional recipe, the ingredients here are sure to have you burning calories and pumping tons of vitamins and other essential nutrients into your body.  This is truly a tasty treat!

This is a perfect dish to prepare before going to bed and in the morning, simply assemble your banana split and start the day with a smile!  If you’d like, try adding a tablespoon of your favorite nuts on top, I like pistachios, but use the foods you have available and get creative!

Serves: 2

banana-breakfast2 whole Bananas split lengthwise
1 cup rolled oats
1 cup non fat Greek yogurt
½ cup low fat coconut milk
1 Tbs. maple syrup
Dash of cinnamon
½ cup fresh blueberries
1/3 cup unsweetened coconut flakes (Bob’s Red Mill)
½ cup fresh pitted cherries, chopped
4 mint leaves, chopped (optional)

Method of Preparation:

1. In a medium container, combine oats, yogurt, coconut milk, maple syrup, cinnamon, blueberries and coconut flakes and mix until well combined. Refrigerate overnight. (The mixture will thicken to resemble ice cream once chilled)

2. Split a banana lengthwise and scoop 1 cup of the oatmeal mixture between the slices, top with cherries and garnish with mint, if desired. Serve cold.
