Super Bowl Game Bodybuilding Friendly Recipe – Arugula Bruschetta

Today’s recipe is a perfect example of a body-friendly finger food. For example, replacing super-fatty stuffed potato skins with this healthier option means you can feel free to enjoy the game instead of worrying about sticking to your eating plan since this dish is meant to help promote muscle building. This recipe makes a plentiful portion – so there will be lots to share (or not). Whip up a batch of these tasty appetizers and don’t be suprised if they disappear!
Super Bowl Game Bodybuilding Friendly Recipe – Steak and Arugula Bruschetta
Yield: About 18 Appetizers
Ingredients:
1 lb. Top Round London Broil
8 oz Baby Arugula
2 oz crumbled Blue Cheese
1 ea. Loaf whole wheat Italian bread
Marinade
1 Tbs. Dijon Mustard
¼ cup Balsamic Vinegar
2 ea. Cloves Garlic (minced)
½ cup Fresh Basil (chopped)
1 Tbs. Olive Oil
Salt and Pepper to taste
Method of Preparation
1. Combine marinade ingredients in a zip top bag. Cut and remove all visible fat from meat, place in marinade for at least 6 hours (overnight would be best)
2. Grill steak to medium (check with thermometer 145degrees) then let meat rest about 45 minutes.
3. Preheat oven to 350 degrees. Slice bread into about 18 slices and place in a single layer on a baking sheet and toast for about 1 minute.
4. Slice steak into thin slices, Top bread with arugula, then 4 slices meat and about 2 teaspoons of bleu cheese. Return to oven for an additional minute to allow cheese to melt. Serve and enjoy.
