I love making recipes with ingredients that are in season and sourced locally. There are so many fun options when making guacamole to your personal taste and it’s a great way of putting your avocados to good use.
4 ripe avocados
3 gloves crushed, raw garlic
4 tablespoons or 1/2 raw red onion
1/2 cup finely chopped fresh cilantro
Juice of 1/2 lime
5 cherry tomatoes diced
2 tsp chilli’s, jalapenos or 4 tbsps fresh chilli paste
- Cut the avocados in half and scoop out the avocado into a large mixing bowl, discard the stones (or save one to put in the guacamole to stop it from going brown).
- Mash the avocado with a fork to the desired consistency; I like mine quite lumpy.
- Add all of the other ingredients and stir well.
- Try and serve instantly to minimize the risk of it going brown.
If you are making it in advance, place one avocado stone in the center and cover with cling film. The citrus from the lime also helps it from going brown.
If you prefer a completely smooth guacamole you can also just put all of the ingredients into a blender, mixer or food processor.
Instead of serving with nacho chips, try serving with crudités such as carrots, celery and jimcama.
