Easy Lemon Protein Cookies

EZLemonProteinCookiesWhen life gives you lemons… make cookies, not a studio album! This Lemon Chia Protein Cookie recipe is low calorie, packed with protein, and DELICIOUS!

4 Tablespoons (30g) Coconut Flour (or Oat Flour)
1 Tablespoon (12g) Chia Seeds
3/4 Teaspoon Baking Powder
2 Scoops (60g) The Protein Chef Baking Protein, or Your Choice Protein Powder (Vanilla works great!)
1/4 Teaspoon Salt
1 Tablespoon Lemon Zest
1/2 Teaspoon Xanthan Gum
2 Tablespoons (28g) Coconut Oil
1 Large Egg
1-2 Tablespoons Your Choice Sweetener
2 Teaspoons Vanilla Extract
2 Tablespoons (42g) Honey
1/4 Cup (2 Ounces) Lemon Juice

For the WHOLE recipe: Calories: 857, Fat: 41g, Saturated Fat: 31g, Sodium: 405mg, Carbs: 64g, Fiber: 16g, Sugar: 34gProtein: 58g

For each cookie (if you make 10): Calories: 85, Fat: 4.1g, Saturated Fat: 3.1g, Sodium: 40.5mg, Carbs: 6.4g, Fiber: 1.6g, Sugar: 3.4g, Protein: 5.8g

1. Take out 2 bowls (make sure one of them is large)
2. Put your Sweetener off to the side, zest your Lemon, and add in all of your dry ingredients into one bowl
3. Lightly mix those together
4. Add your Sweetener and all of your wet ingredients into your other bowl
5. Mix those together
6. Slowly add your dry ingredients into your wet ingredients and mix everything together until it looks like cookie dough
7. Take out a baking pan, line it with some parchment paper or a silicone baking mat, and shape your dough into cookies
8. Bake at 325° F/162° C for 10-12 minutes

Makes 10 Cookies
